Snowbird Recipe:
Blue Cheese Dressing
This dressing is amazing and beautifully easy to make in small batches. Refrigerate it a few hours for the flavors to blend. The smashed fresh garlic is essential, taking it from good to great! My simplified version is inspired by the Stilton Blue Cheese Salad Dressing recipe on page 143 of "Lulu's Kitchen: A Taste of the Gulf Coast Good Life" by Lucy Buffet.

Ingredients
Two Servings
1/3 cup blue cheese crumbles*
3 T. fat free half and half
1 T. whole milk Greek yogurt
1 large garlic clove minced, then smashed
1/2 t. minced onion flakes
1/2 t. Kosher salt
1/4 t. onion powder
1/4 t. garlic powder
1/4 t. fresh cracked pepper
Four Servings
2/3 cup blue cheese crumbles*
1/2 cup fat free half and half
2 T. whole milk Greek yogurt
2 large garlic cloves minced, then smashed
1 t. minced onion flakes
1 t. Kosher salt
1/2 t. onion powder
1/2 t. garlic powder
1/2 t. fresh cracked pepper
*Note: I prefer milder blue cheese crumbles that are "barely blue". If you like a strong blue cheese, the dressing flavor will reflect that and the color will be much more blue-ish purple.
Suggested Brands: Cabot® Whole Milk Plain Greek Yogurt, Fage® Total 2% MilkFat Greek Strained Yogurt, Alouette® Blue Cheese Crumbled or Wal-Mart® house brand, Marketside® Blue Cheese Crumbles
Preparation
For a small batch recipe, I mix the dressing in a glass measuring cup
OR mix all ingredients in a small bowl
Use a spoon or fork to smash/blend the blue cheese with the other ingredients so it's a creamy consistency. Some of the blue cheese should remain lumpy to give the dressing texture
Refrigerate a few hours so the flavors can blend
Serve chilled
Servings:
Approximately 1/3 cup or 1.25 cups
Serving Suggestion:
--With a green salad
--As a dip with chips, adjust the consistency with half and half if needed
