Snowbird Comfort Food Recipe:
Popovers
Delicious, light, hollow golden popovers are simple comfort food suitable for serving to your guests. They are fantastic split open and slathered in butter. They can be stuffed with the filling of your choice for a light lunch. And true to snowbird cooking, this is another easy, almost foolproof recipe if you follow the directions. Popovers adapt well to any muffin pan, whether standard sized or with mini sections -- and of course you can bake them in a specially made popover pan, which is what I do in my Midwestern home. This recipe was given to me by my mother a few years after a 1976 family vacation to the East Coast. We ate lunch at an iconic restaurant overlooking the harbor, the now defunct Anthony's Pier 4 in Boston, where they memorably served popovers in clay flower pots.
Snowbird meals tend to be much simpler, using fewer ingredients and a very limited selection of appliances and gadgets to prepare them. Choose the freshest, highest quality ingredients and find alternate ways to make your favorite recipes. Ingredients
1.5 cups flour
1.5 cups milk
3 large eggs
1 t. salt
8 T. Butter OR margarine
OPTIONAL: Add 1 t. chopped fresh savory green herbs such as rosemary, thyme, chives or a blend of herbs
Preparation
Preheat oven to 425 degrees
Grease muffin pan with lots of butter or margarine
Preheat muffin pan in the hot oven for best results
Crack eggs into a bowl
Add flour, salt and milk, whisk by hand. It doesn't matter if you have flour lumps at first, they will easily blend. The batter will be thin.
OPTIONAL: Add a teaspoon of chopped fresh herbs
Pour batter evenly among the sections of your pan so the sections are half to 2/3 full
*Bake for about 18 minutes at 425 degrees, reduce heat to 350 degrees and bake about 18 minutes*
Let cool a minute or two and remove popovers from pan. They may deflate when the steam escapes the hollow center.
Best when served warm with butter or margarine
Leftovers are also delicious
*NOTE: Adjust the baking time if you are making popovers in a mini muffin pan

Three or four servings
Recommended Sides:
--Serve with butter or margarine
--OR split and stuff the baked popovers with your favorite salad such as chicken, crab, ham or egg salad
